Oven toasted bread with vegetables and goat cheese

Ingredients
Fennel
Tomatoes
Zucchini (optional)
Onion
2 garlic cloves
Rosemary
Sourdough bread
Lettuce
Goat cheese
Parsley or basil
Salt and pepper
2 tbsp. salad oil
½ tbsp. vinegar
Preparation
Oven roasted vegetables
Preheat the oven to 220 degrees. Cut the fennel, tomatoes, and zucchini in bite sized chunks. Peel the onion and garlic and chop roughly. Place everything on a baking sheet and season with salt, some rosemary and add some oil. Mix well and place it in the oven for about 20 minutes.
Goat cheese with herbs
Chop the parsley or the basil and add to the goat cheese, season with pepper and salt.
Toasted bread with lettuce
Toast the bread in the oven for about 5 minutes, until it develops a brown crust. Spread the vegetables on the toasted bread and add some goat cheese on top. Chop some lettuce and mix with some oil, vinegar, and salt inside a bowl.
It’s ready to serve!
